Food recipe: Spinach and strawberries, a match made in heaven

Vegetable Food Recipe Week: Day 3
They said it couldn't be done. They scoffed. They laughed. But we have done it. we have made it to day 3 of the now famous Vegetable Food Recipe Week.

And, this week, might I introduce you to: Spinach. As in, a spinach salad with a sweet, sweet twist.
Food recipe: Spinach salad with a sweet, sweet twist
2 - 3 bunches fresh spinach (or a big bag of spinach from the grocery store), very well rinsed (grit tends to hide in spinach so be vigilant about the rinsing)
1 - 2 pints fresh strawberries, sliced
1/4 - 1/2 red onion, sliced very thin (use a mandoline, if you have one)
2 - 3 generous tablespoons balsamic vinegar, the best you can find (product from Moderna, Italy tends to be good)

Loosely rip the spinach leaves into smallish pieces (in half should do) and put into your salad bowl. Top with the sliced strawberries and onion slices. Just before serving, drizzle balsamic vinegar onto your salad. Toss and serve.
This is one of those incredibly fast and easy recipes that transcend the simple, simple ingredients and preparation to become something almost heaven-sent. For me, this is second only to Caesar salad as the tastiest salad of all time. And it is certainly the salad I most often serve guests.
