A vegetarian recipe for your tummy and a free email for your mind

This company, Vital Juice Daily, contacted me and wanted me to tell you about their free health and wellness daily email.

Now, I'm all for resources, so I went and checked it out. And, of course, the first place I headed for was the recipe section.

And the first recipe I tripped across was for the only grain that is a complete protein.
Vegetarian recipe for Italian Quinoa
2 cups uncooked quinoa, rinsed
4 cups water
1 cup pitted green olives, chopped
2 cups artichoke hearts, sliced
1 cup kidney beans
1 ½ cup roasted red bell pepper, sliced
½ medium Vidalia onion, chopped
1 cup cherry tomatoes, halved
1 lb. low fat mozzarella, cubed (optional)
½ flat leaf parsley, chopped (or a ¼ tsp. of fresh parsley)
4-5 leaves of fresh basil, chopped

Rinse quinoa. Bring 4 cups water to a boil, add quinoa, cover and simmer on low heat for approximately 15 minutes or until all water is absorbed. Let stand in pot when finished for 10 minutes, then fluff with a fork and pour into a large bowl. Fold in all of the remaining ingredients.

Can be served hot or cold.
